General tips

🗓️ Recommend you to make reservations in advance. Many distilleries are not open on weekends. Some tours have more extravagant tasting and touring options.
🍷🍾 As you plan your spirits tour, you may want to bundle a few wine or champagne tours depending on the region you visit. I have a guide outlining France's wineries if you're interested.
🥃 A little about France's spirits:
Breton Whisky: This is a protected geographical indication (PGI), which involves preparation, fermentation, distillation and aging – in barrels of up to 700 liters – in Brittany. More precisely, in places such as Ile-et-Vilaine, Morbihan, Finistère, Côtes-d’Armor and other communes of Loire-Atlantique. It should be noted that this whisky can be produced with any cereal, whether barley, rye, wheat, buckwheat, triticale, spelt, corn, or oats. It can also be a mixture of several cereals.
Whisky Alsacien: like whisky Breton is a whisky IGP. It is processed in Alsace (Haut-Rhin and Bas-Rhin). It is characterized as a single malt barley whisky and the use of any colorant is prohibited. It is mainly aged in oak barrels but after three years it can be transferred to other barrels of different wood.
Cognac: Cognac is a specific type of brandy produced from distilled white wine. It must be distilled twice, using copper pot stills, and aged in French oak barrels for a minimum of two years.
Armagnac: A centuries-old type of brandy from the Gascony region of Southwest France, Armagnac is a white-wine-based liquor traditionally distilled once using a column still known as an alembic armagnaçaise, then aged in oak barrels. The epitome of a craft spirit, the majority of Armagnac is produced by small-scale, often family-owned operations that take a great deal of pride not only in their deeply unique versions of the spirit but the cultural importance of Armagnac to the culture of Gascony.

The Sainte colombe brewery is first illustrated by the quality of its beers before embarking on the production of whiskey. For its spirits, the brewery gave birth to "the fairy rock distillery" echoing the eponymous dolmen whose construction would be the work of the fairies!
Ki Gwenn: White rye alcohol, Wheat, Black wheat and barley.Roc'Elf: Single malt from 5 to 6 years old in syrupy white wine barrels (mainly from the Coteaux du Layon). The last year of aging takes place in barrels of beer having received, for one year, the "barley wine of SAINTE COLOMBE".
Breton mist: a whiskey liqueur.
Other types of casks as well as peaty distillates mature patiently in the cellars of La Roche aux Fées, there is no doubt that this range will expand in the years to come.

Glann ar Mor was created in 1997 by Celtic Whisky Compagnie, with the first single malt whisky produced in December 1999. In its present form, Glann ar Mor has been operational since June 2005, bottling its first unpeated single malt in late 2008. In November 2009, the first peated single malt (about 30-35 ppm of phenol) was sold under the brand of Kornog ("West Wind" in Breton). The distillery is located on the seafront (Glann ar Mor means "At the edge of the sea" in Breton[1]). Bottles feature the Héaux de Bréhat Lighthouse.[1]

When the company was established in 1986, the challenge was to innovate and develop products made from the Celtic people’s sacred fruit: apples. A few decades on, the challenge was met. The Distillery’s craft cider, Lambig de Bretagne A,O,C, and Pommeau de Bretagne A,O,C, are now amongst the most famous in Brittany.

Cognac Exploration

Cognac is an AOC (Appellation d'Origine Contrôlée: "Controlled Designation of Origin"), which means that its name is legally protected and only a Cognac distillery in France can produce it. By Cognac distillery we mean a maison Cognac (“Cognac house”) where the dry white wine is made, distilled twice, aged and expertly blended by a cellar master, as per the appellation’s rules.
No visit to a Cognac distillery is like another: some of them offer original Cognac blending workshops during a tour of their cellars, whereas others include a boat ride across the river or a visit to King Francois I’s castle. One thing is for sure: they all make for an unforgettable experience as they finish off with a spectacular tasting of some of the best Cognacs in the world.

We are offering a variety of tours combining two aspects of history: the history of France and the history of Baron Otard Cognacs up to the present day.
Cognac’s majestic royal castle was the birthplace of one of France’s most illustrious kings, Francis I, but after the French Revolution it was acquired by the entrepreneurial Baron Otard who realised it was the perfect venue for his newly founded cognac house, with Renaissance salons transformed into barrel-ageing cellars.

A cognac visit with a difference. Dynamic Sophie Blanchard runs one of the region’s rare organic vineyards, produces her own €5-€8 red, rose, white and bubbly wine, and sells 75% of her production direct to customers who have been loyal since her pioneering father made the estate bio in 1972. The tour takes in the vineyard, cellars and distillery, then Sophie makes everyone feel at home round the tasting room’s bar, letting them in on insights, such as cognacs bought directly from winemaker distillers like hers are usually aged far longer than the classic commercial bottle. A VSOP (Very Special Old Pale) has a minimum ageing of five years but an artisan cognac may be 10-15 years old, while the top-end XO (Extra Old) could be 25 years old rather than the statutory 10.

Dany Barbot and her brother Serge Marcadier offer a splendid experience for visitors, beginning with a bumpy vineyard tour in a 1943 US army jeep. Back in the distillery, Dany, a retired teacher, gives a detailed description of the distilling process: the première chauffe (first heating) distillation producing 30C alcohol, the second, bonne chauffe, trickling out at 72C. Tasting its four artisan cognacs it is easy to appreciate the differences from its 10-year-aged VSOP to the 40-years Hors d’Âge. Serge rents out a nearby farmhouse B&B, where a double room costs €52 with use of a big swimming pool, outdoor barbecue and modern kitchen.

Bertrand and Sabine de Witasse gave up high-powered jobs in Paris to take over the family estate 24 years ago. Bertrand learned winemaking and distilling from scratch, and Sabine now acts as a guide, explaining: “I am going to recount the reality of our daily life, our family story, and show how one of the world’s most sophisticated, technically perfect products, actually starts out life here in this rustic, chaotic, rural environment.” Their imposing farm was built in 1861 and the chai (storeroom) stretches for 150 metres, from the point where the grapes arrive from the harvest, direct into the press, then pumped into concrete cisterns to ferment into wine and then, at the end, are two pot stills for distilling. They are one of the rare bouilleurs de cru who still heat with wood rather than gas, but it means Bertrand spends two months living and sleeping next to the 1926 alambic – as every 45 minutes he needs to restoke the wood fire.

One of the crucial ingredients in the mix that creates cognac is the barrel used for ageing. The cask must be French oak: wood that imparts aromas such as vanilla, caramel and spicy ginger. The countryside around Cognac is dotted with artisan cooperages but only the family-run Allary opens to the public. Be prepared for a lot of noise and action: from the hammering and sawing, dust, smoke and leaping flames as they toast the inside of the barrels, while one bearded cooper performs what looks like a manic dance round the barrels, pounding the staves with a giant hammer.

Armagnac | Gascony Region

At the heart of the Gascony region, the Armagnac vineyards have an authentic local heritage: remnants of the ancient Romain empire, chateaux, Flaran Abbey, and villages listed among the ‘Most Beautiful Villages of France’
In the Gers department in the far southwest of France, in the land known historically as Gascony, the locals make Armagnac, a world-famous brandy. A craft brandy, it’s not produced in industrial quantities but lovingly made by family-run wine growers, small producers, and artisans.
The end of October is a wonderful time to visit. This is when the annual Armagnanc en Fête takes place. The 12th century village of Labastide d’Armagnac hosts an event in which visitors can sample from every small, family-run distillery in the famous Bas-Armagnac region. 
Le Bas-Armagnac
Bas-Armagnac, the western part to the west is hilly country. The vines grow on poor and acidic silica clayey soils sometimes mixed with Gossanous elements that color them, hence the name 'tawny sands'.
This area produces light, fruity, delicate and highly regarded brandies.
L’Armagnac-Ténarèze
Armagnac Ténarèze, in the center part, is a transition zone. There are fine siliceous soil called Boulbènes, clay-limestone soil called Terreforts and calcareous clay. The eaux-de-vie are generally full-bodied.
Le Haut-Armagnac
Haut Armagnac, in the southern and eastern part, is very extensive. The hills are made up of limestone and clay-limestone soils, valleys are sometimes covered with Boulbènes. A few plots of vine are to be found here and

Éauze or Elusa, the Antic town, is the capital of Armagnac. This is a beautiful city in the heart of the vineyards. It is the emblem of Gascony's tradition of good living.

It is obtained through a distillation of white wine in an Armagnac still and aged for years in oak barrels before being released.
Our Armagnac is aged in sweet wine cask which gives it smoothness and character.
In order to preserve its personality, no blends are being performed; it thus maintains its natural alcohol degree straight from the barrel. This brandy has not been chill filtrated and comes from a single barrel. Vintage available at request.

Entirely open to the public, the Départemental Domaine d’Ognoas covers more than 650 hectares of forest, vines and crops. You can observe the flora and fauna along the banks of the River Midou while a pond and a fortified house guarantee a total change of scenery.

At Pellehaut, two grapes varieties are used to produce the brandies:
•    Ugni Blanc, used for the armagnacs that will be on sale from 15 years of age.
•    Folle Banche, the oldest grape variety in the Armagnac region, which produces fine, complex brandies that can be drunk younger, from 10 years of age in the case of Château de Pellehaut.
Open from Monday to Friday from 9 am to 12 pm and from 2 pm to 6 pm and Saturday from 10 am to 12 pm and from 2 pm to 6 pm.

Maison Delord offers Blends from three years to over thirty years as well as Vintages from 1900 to the present day.
Try the young Armagnacs in cocktails or extended with ice cream. They will bring all their flavors to the kitchen to spice up, flambé, flavor and accompany dishes and pastries. Older Armagnacs express their subtlety, finesse, richness and character on their own or accompanied by a cigar, a chocolate dessert, an arabica with a tangy flavor.
Let yourself be tempted by the Floc de Gascogne as an aperitif and the Fruits with Armagnac as a dessert.
